So, Why do we Need Use Sensors?

You may want to skip using a sensor just because it takes time, it's hard, it doesn't work, and that you think using motor rotations and degrees will be more accurate. Trust me, I believed the same thing for a VERY, VERY, LONG TIME; even though my coach would tell me, "Hey, where're all the sensors?", I would keep using motor rotations and degrees... Now, after learning my lesson I have improved as a Mindstorms programmer and my robotic accuracy has also improved. It took me a long time to finally discover good and accurate sensor programs. No worries, you don't have to  go through all of that strife, just a few clicks away are some programs which have taken me almost two years to fine tune to perfection. So now, just think about some situations in which you cannot solve a challenge without using a sensor. Should be pretty easy...
